i have a last minute order for an 8" round. I don't already have this size in freezer so will need to make tonight. The customer wants one chocolate and one vanilla layer. I know I can make other cakes to put in freezer, but can I freeze just the cake mix? If so, for how long and how do you treat it once you need it again?

I don't think a cake mix can be frozen.Refrigerated yes...but not frozen.The cold changes the chemical structure in it and reduces the ability of the levelling agents to allow it to rise properly.
