when painting modeling chocolate i use dry powdered colors. It gives a soft effect, so if you are looking for darker, you might need to add some vodka and make a paint, but i don't know if that will ball up on you.

I either dry brush it with petal dust or they say you can use petal dust mixed with cocoa butter. The gel paint just kind of rolls off. Modeling chocolate is fat which doesn't mix with the water in the gel colors.
