I have to make a cake this weekend and it involves having a boston cream filling in the middle. Because i work full time i was going to do it Thursday night as it's being picked up on Friday and the party is Saturday.
The cake will also be covered in Fondant and because Fondant can't go in the Fridge will the fillling still be good by Saturday if i do it on Thursday?
Please help.
There are so many fillings for BCP, that it's impossible to say..
However, fondant cakes can be successfully refrigerated (if the filling is perishable). Just don't touch any spots of condensation that might form after cake is removed from 'frige; the spots will evaporate on their own without leaving marks.
If you choose not to refrigerate because of the fondant, use the Bavarian Cream sleeved pastry filling that doesn't require refrigeration and you'll be good to go.
Or you make a faux Bavarian Cream filling:
