I've added unflavored gelatin to Jello to make Knox blocks for the kids, so I know unflavored gelatin will make a firm ice cube...
I don't know how adding sugar to the unflavored gelatin to make it sweet would affect the clarity. I do know from making Jello, if the sugar isn't completely dissolved it will make the bottom of the Jello grainy (and not so transparent). Not so good when making ice cubes.
(From making popcorn glaze) I suspect if the sugar is overcooked before adding the gelatin, the color will be yellow not translucent. Also not so good when making ice cubes.
Might want to search the "Sugar/Candy" forum for other ice cube options.
