The largest pans I've seen are 3" high (yet I'm still pretty new so I could easily be wrong), but you can always torte, fill, and stack, and make it as high as you want.
I would lower the oven temp and bake longer, and just check it with a toothpick as you normally would.
I hope someone corrects me if I'm wrong.
