For this tutorial I found on Wilton:

Could you use wax paper instead of parchment?? & could I put it on fondant?

I think so. Really you can use anything you can see through. The entire layer of piping gel isn't supposed to come off the paper anyways, just enough to leave a mark.

Wax paper would work fine.
