It'd be cool if you could bake pop rocks into it, so that when you ate it, it'd pop like soda.

Vanilla would be good!
I don't think the pop rocks would work. They'd lose their pop once they came into contact with moisture.
I used a vanilla frosting with extra vanilla when I made cupcakes. Everyone loved them once they got past the uniqueness of the flavor. The name put them off a bit until they tasted them.
I use root beer buttercream because you can't have enough of a good thing!
