hi - i would love to start working with modeling chocolate, the
roses i have seen are so gorgeous on top of a cake, does anyone have any recipes to make modeling chocolate and any tips on making the
roses?

if your library has any cake or cookie books by toba garrett, she has a great bit on how to make a chocolate rose. it is a lot like making a gumpaste rose, but easier and without wires: there is a cone and you wrap with one petal, then three, then five.

i haven't searched on you tube, but i bet there is a video on there on chocolate roses, lol.

you can make the petal from flattening a round ball of chocolate and thinning its edges with your fingers, or you can use rose petal cutters.
