I've been struggling with making bows for a while and finally made a perfect one. Thought I'd pass along some advice since all the tutorials make it look so easy.
I'd start making the loops a few days in advance to allow everything to harden up. I'd use either all gumpaste or 50/50 mix of gumpaste and fondant. I can never get an all fondant bow to harden up as well and it ends up cracking. Make sure to use very stiff royal icing to hold the bow together, some ppl use chocolate too. But buttercream just won't cut it. I try my loops overnight on a broom stick to keep them all uniform in shape/size. The thicker the loops, the fuller the bow will look (3" x 6" is a good size for a 6-8" cake) I usually make 16-20 loops
