After making MMF and MFF, after trying Wilton's, I've settled with Satin Ice. Readily available, not much more expensive than making from scratch and consistant.
I'm with in2cakes2, I use Michelle Foster's fondant. I have also used Satin Ice when rushed for time - it tastes good, too!
About 1/8" thick or so. Just thin enough to cover and form over the cake without tearing and just thick enough to be easily handled. Its a feel you develop after using over and over. Practice as you can, and like golf, you get better by playing often.
I buy the fondant from decopac, I like how it tastes and its super easy to work with!!! I love it! Ive tried pettinice fondant from bakery crafts and ive used satin ice. Im not too fond of the pettinice fondant from bakery crafts because I feel like it picks up anything that is on my mat. And the satin ice i use but really only for red and black premade colors. For chocolate fondant I buy from bakery crafts its super yummy. It tastes like tootsie roll.
