Need Help With Whipped Icing...

I have two questions. First, does anyone have a good scratch recipe for whipped icing? I bought the Wilton mix and used it for the first time on Saturday. I really liked the texture of it, but hoping to find a tastier recipe. I don't care for buttercream because of the shortening. But the texture of the whipped icing is great!! Is there any way to get this texture without using whipping cream and having to refrigerate?

Second question... what is the best way to smooth this type of icing? It does not crust, so I can't use the foam roller or Viva towel. I used hot water and my frosting spatula. I would have liked a smoother cake though (it's the princess cake in my photos). Is this the best method - and I just need to work at it longer? I don't want to melt all the icing off!

Any recipes or suggestions would be appreciated! Thank you!

Here is the whipped icing recipe I use, it is from this site:

This icing is made with shortening, but it really is good. Not greasy tasting, very light. I just smooth mine with my angled spatula and it really does a good job. Someone else may offer better ideas for smoothing.

This frosting is not necessarily a "whipped" frosting, but it's so delicate and light. I love it, it's so incredible.

1 cup butter (room temp.)
1 cup shortening
1 tsp vanilla
1 tsp almond extract
3 cups powdered sugar
1/4 cup flour
1 cup powdered sugar (if necessary)


Whip butter until smooth. Add the 1 cup shortening
Whip until fluffy. Add vanilla, almond extract, the 3 cups of powdered sugar and flour. Whip until smooth.
To increase stiffness of frosting, add an additional 1 cup of powdered sugar. Decorate cake as desired.

Ladies, thank you for the recipes. I will take a look and try them as I have time. I did not think that recipes with shortening in them could come out light but I have limited experience here and I am willing to try them.

If anyone else has a whipped icing recipe without shortening - I would still appreciate it if you could pass it on!
