I have a request to make this fondant covered cake with gumpaste cherry blossom but am having trouble pricing it. How much do you think a 4-8-12-15 size cake would cost? They have also requested chocolate ganache in a couple tiers. This cake should serve roughly 170-175 people. What should I take into consideration when pricing a cake?

There are so many flowers on that cake. They are going to take a lot of time to make. I would say charge $5.00 a slice (in my area that's quite a bit). Other people might even tell you to charge more. It really just depends on your area.
If the bride and groom are keeping the top tier, you are cutting it very close on servings. May be change your pan sizes up a notch. Also, you should charge $7.50 a slice no question. That's a lot of work.
