Hello CC'ers!
I am in need of a CLASSIC vanilla buttercream icing... that will hold its shape, taste yummy and crust over somewhat. There are so many icings listed in the recipe section, however I thought one of you would be able to give me a tried - true and tested recipe!
Your help is SO much appreciated!!!!!!!!!!
I have two really good vanilla icing recipes:
Vanilla Bean Icing:
2 c. hi-ratio shortening
2 tsp. pure vanilla extract
2 vanilla beans (scrape insides)
1/4 tsp. salt
2-3 lbs. powdered sugar
1/2 c. Half & Half
Whip shortening, vanilla, vanilla bean scrapings and salt until fluffy in mixer. Add powdered sugar, in 3 batches, until you get desired consistency. If icing gets too thick, thin with Half & Half. Beat until fluffy.
White Chocolate Icing
2 c. hi-ratio shortening
2 tsp. pure vanilla extract
1 tsp. pure butter flavor
1/4 tsp. salt
2-3 lbs. powdered sugar
1/2 c. Half & Half
1/2 c. melted white chocolate chips
Whip shortening and flavorings and salt until fluffy in mixer. Add powdered sugar, in 3 batches, until you get desired consistency. If icing gets too thick, thin with Half & Half. Add melted white chocolate and beat until smooth and fluffy.
The white chocolate helps cut the sweetness of the powdered sugar and makes a great vanilla icing. I'm using both recipes this weekend for a large cupcake order and the clients loved both versions when they tasted them.
