Seriously though, your cake flavor combo sounds fabulous and if you sampled it before hand and have never had any complaints about moistness I'd just chalk it up to taste being subjective.

I'm feeling much better about this ~ you are right, taste IS subjective.

Hey, do any of you ever offer refunds if someone simply did not like the flavor combo they chose? I was wondering what your policy is for refunds... Say, there is nothing physically wrong with the cake, but they didn't like the taste (not their thing), how do you handle this? I'd really love to have some type of formal policy. Are any of you willing to clarify your refund policy?

This could simply be a customer who is used to box mixes and not scratch cakes. Scratch cakes may look drier because they are fluffier inside than box mixes. The old "we eat with our eyes first" kind of thing.

It's not your responsibility to make sure a combo is something a customer will like. I don't order sushi because I seriously doubt I will like it. If I did order it, and didn't like it, it's my bad not the chef's.

It's definitely important to me that my clients like what they order too, however having said that, I can't afford to refund any $$ because they simply didn't like the flavor combo they ordered.

You really can't get into that kind of business practice. Once people realize what you're offering (money back guarantee, if you just don't like the flavor) you'll be taken advantage of in a big way.

If you think that a particular combination may not go well together, then by all means say something or suggest something else.
