If it's full strength confectioner's glaze, I wouldn't use too much of it on anything that will be eaten--it's kind of bittter.

You can thin it with a clear alcohol (Everclear, gin, or vodka) so that it's 50/50. It dries faster, isn't as bitter, and is still shiney. Still, large quantities of it change the flavor of the fondant.

What is the confectioner's varnish used for?

I use a varnish made from corn syrup and either vodka or water.  The one made with vodka dries faster but they both seem to work about the same way.  I start with 2 parts syrup and one part water (or vodka) and add water or vodka until the mix is thick-ish, but definitely brushable.  You can use multiple coats if you need to.  I only use this on fondant or gumpaste but I'm going to experiment with it on isomalt (using vodka).  The sprays or so prohibitively expensive!
