Taste Vs Ease With Fondant?

What is the prevailing opinion about fondant? I hate the taste of Wilton's and love the taste of MMF, haven't tried Satin Ice. Which is the easiest to work with (I'm betting MMF is NOT), and how do the tastes compare?

I have never tried MMF, so I can't help you there. I like to make my own fondant so that I can flavor and color it as needed. It's also much cheaper.

Satin Ice is pretty good - too soft for me because I have very warm hands. Wilton is my least favorite for many reasons. Pettinice is similar to Satin Ice. They were both developed by the same person. That person moved from one company to the other and had to make a new formula.

Some people like FondX, I don't. I got some free and was glad I had not paid for it.

If you have a good heavy-duty mixer (KA), you might want to try making your own. It's a little time consuming, but it tastes good and can be frozen (the other fondants can be frozen as well).

Sugarflowers would you mind sharing your recipe for fondant? I've been using pettinice and it's much better then wilton but if home made taste better I'd like to try it. TIA

yes please post your recipe. i have ONLY used wilton and i HATE the taste, it does make cakes look pretty but my #1 priority is taste. Anyone have any words of advice on MMF. I would like to try this but havent gained the courage yet, and i do have a KA(best present i ever got).

Sugarflowers what recipe do you use and do you have a good chocolate fondant recipe. I don't like mmf and use glasier rolled icing (fondant)and its very good but getting to expensive I go through so much of it at $32 for 5kg seem to be ordering 3-4 buckets every other week thinking I should try and make some. It would be great if you could pm me and let me know.

I'm not much help (newbie), but I recently made the fondant recipe in Toba Garrett's Well Decorated Cake. I hated it, but my son and mom loved it on the finished cake. I just have a general aversion to fondant (love the look of it though). I will say that it tasted better than Wilton's (blech!)

I have made home made fondant, (Wilton recipe) and while it tastes a LOT better, it is a bit harder to work with. The secret that I have learned is to use MMF because the taste rocks, but knead in some crisco shortening and that will give it the pliability and elasticity like the Wilton stuff that is so easy to use. It's the best of both worlds! HTH some of you!!!

Here is my fondant recipe. I've added a lot of extra detail to make things easier. It doesn't look easier, but I can make a batch of fondant in an hour while making other things. The 18" wide plastic wrap is one of the best supplies to have on hand. You can get it at Sam's or Costco for around $15 and it lasts a LONG time.

Vanilla Fondant

1/2 cup milk
3 pkg. unflavored gelatin
1 cup corn syrup
3 Tbsp. butter or shortening
3 Tbsp. glycerin
2 tsp. clear vanilla
dash salt
3-4 lbs. powdered sugar

Using a double boiler pan, sprinkle the gelatin over the milk, stir, and let it bloom or set. Place the mixture on the double boiler and cook until the gelatin is dissolved. Add the corn syrup, butter, glycerin, vanilla, and salt. Cook until the butter is almost melted, stirring occasionally. Remove from heat and allow mixture to cool (it can be slightly warm before adding powdered sugar).

In the KA bowl, spray some non-stick cooking spray in both the bowl and dough hook. Add one bag (2 lbs.) of powdered sugar to the bowl. STRAIN the gelatin mixture into the powdered sugar and mix by hand. Add about 1 lb. of powdered sugar; place the bowl and the dough hook on the mixer. Blend very slowly until sugar is incorporated. Add more powdered sugar as needed. The fondant might start slapping around the bowl, or it will look stiff. Have a non-stick surface dusted with powdered sugar ready as well as some plastic wrap "painted" with cooking oil. Knead the fondant until smooth, wrap in plastic twice (the second wrap does not need oil), and then place it in an airtight container. Allow it to set over night.


I'm still trying to sell my cookbook and it has different versions of fondant flavors in it. It's called "The Sugar Fix" and there is a link to Author House on my web site www.thesugarfix.com. But just as a quick hint, use chocolate chips to make the fondant chocolate and add at the same time as the corn syrup, etc.

I just used fondant for the first time yesterday, and I used the Wilton because I didn't know what else to get. I wasn't a huge fan of it, I added a good portion of vanilla extract to try and get it to taste better...it worked...alright but wasnt amazing. This was for a family party, no one was really crazy about it except my cousin.

What is MMF? I keep seeing it on here but don't quite know what it is. Also, where is the best place to get fondant? Since I hadnt used it before and was in a time pinch i just went to Michaels >.<

MMF is marshmallow fondant. It's made from melted marshmallows and sugar pretty much. I don't care for the taste although compared to Wilton's it's delicious.

Hey Lia! MMF is MarshMallow Fondant. There are recipes for it here at CC, it's super easy, only 3 ingredients and it takes like 5 minutes to make. If you knead in a little crisco it works almost as well/easily as the Wilton stuff, but it tastes SO good!! You'd really be shocked how much better it tastes. Give it a try!!
