Finally made a batch of Italian Merengue Buttercream. Followed Warren Brown's (Cakelove) tutorial on Youtube. OMG, that stuff is amazing. I added a cup of fresh strawberry puree..it is out of this world!
My only worry now is that I have enough for my cake this weekend, because I keep goin back for one more taste!
