Are you trying to start a business? I don't understand what you're asking, so if you could be more specific we might be able to give you an answer that would make sense 
The shop, definitely. Bigger refrigerator space, bigger freezer space, 10 times the counter space, can bake 20 cakes in the ovens at one time, bigger mixer. I can get more done, faster, with bigger/better equipment at the shop. Some think if they bake at home, it's easier because you don't have to travel to the shop. Wrong-o. I can get more done at the shop, be done, and then when I come home, I'm DONE.
No more of this staying up past midnight for me!
I bake from home, and Debi's right about the bigger capacity. I'm also in a state that allows home baking businesses, but if you're not, you'd have to go with a shop to be a legal business.
