I have a student and every time she makes royal icing it is runny. She says that she goes exactly by the directions and after washing her equipment has cleaned everything she is using with white vinegar including bowls. The only thing that I can think of is perhaps the meringue is bad.

Poor thing, she has had such issues with Course 2 and the royal icing and she just phoned me to say that the cat ate her cake that was for the final tonight. I had to laugh.

What do you think about the meringue powder?

Hmmm, I don't know. I thought the thing that was great about meringue powder was that it didn't go bad, but I really don't know. Here's a bump!

I actually contacted a Wilton supervisor and she said that meringue goes bad after 6 months. I asked her if there's a code on the can that could be used to determine if its beyond 6 months and haven't heard back yet.
