Substitute For Heavy Cream? Need To Make Chocolate Icing
Baking By Creative_chika Updated 23 Jul 2013 , 7:15pm by jennicake
I have a recipe for Chocolate Truffle Filling; from Cakes to Dream on, Colette Peters, but it requires heavy cream. Is there a substitue for heavy cream or a recipe? OR is there a great chocolate icing/filling recipe you could possibly help me out with. Thanks!
This list always comes in handy. It says, if it isn't needed for whipping, to use 2/3 c whole milk + 1/3 c melted unsalted butter.

i've used evaporated milk in ganache before (joy of cooking reference as well), but its no match for the real thing (heavy cream) taste wise
Macsmom - Thanks so much for the substitutions list!! This will come in real handy one of these days!!!!!
Sweetie, you can use a couple of tablespoons of flour and an equal amount of butter. It makes a thick paste and is very useful in icing when you don't have cream that is desired. This is a fantastic substitute for cooking and I wish you the very best with your cooking.
