I personally won't let one sit longer than 2 months. But generally I use them within 24 hours of freezing them.
I was just searching this very question. I always freeze my cakes. I thawed one after 6 weeks that tasted perfect. So I have 2 cakes in the freezer now since January that I don't want to waste (party was canceled in Jan), so I was thinking of thawing for Easter. Is 2 months way too long? They are double wrapped in saran wrap and then double wrapped in foil.
Any experience?
We ate the top tier of our wedding cake on our first anniversary - it tasted just as good as it did the day we were married! (It was wrapped like crazy and stored inside a cardboard box in the freezer).
I have frozen cakes and eaten them 3 months later and they tasted just fine - and no one threw up, lol.
