Raspberry Jelly As A Filling? Help! Baking As I Type

Ohhh I could kick myself in the butt... I meant to grab raspberry preserves, but got raspberry jelly instead. I'm making lemon cupcakes, and wanted raspberry filling. Can I use jelly fora filling? Or will it make the cupcakes a mushy mess? Can I mix the jelly with buttercream for a raspberry filling??? It's just for the family here but darnit lemon/raspberry sounds FANTASTIC!!!!

jelly is used in donuts all the time -- so...... why not

and mixing it with BC for a Raspberry "Chiffon" -- well why not?

bigger worry here is the big blob of filling that will inevitably end up on the front of someone's shirt! (don't I know from experience!)

I think you can heat the jelly to make it slightly more runny (like a filling).

Definitely mix it with the buttercream to make it more firm.

Lemon raspberry is AWESOME!!!! So is Lemon blackberry.

It will work fine as a filling just don't mix it up too mix so it stays solid and doesn't get runny. I've used both in the center of cakes.

I have used it without a problem..... I've also sprinkled Raspberry or strawberry (dry) jello into white butter cream, and it is YUMMY !! You have to let it sit for a little while so it doesn't get grainy......

Definitely mix it with the buttercream so yummy and lemon blueberry is also delicious!

oohh thank you thank you thank you!!!! I had originally bought lemon pudding to fill the cupcakes but then remembered RASPBERRY!! YUM O!!!!
Not sure what flavor to frost with though.. but I'll be making the buttercream in just a few minutes so... probably go with lemon. Still sounds yummy
