Good Afternoon Bakers! I have a couple general questions about fondant? How far in advace can i cover a cake in fondant? Does it have to be refridgerated after its covered? Thanks for your help in advance ![]()
You can cover a cake in fondant a couple (to a few) days in advance. Many fondants explicitly say that they cannot be refrigerated. Some, like Satin Ice, say they can be refrigerated, but you have to be careful how you bring the cake back to room temp. If you live in some warmer climates, a fondant cake right out of the fridge will "sweat," making the fondant all gooey. Many people will take a fondant cake out of the fridge and turn a small fan on it as it comes back to room temp before serving to help evaporate condensation and keep the fondant from getting gummy.
