Well, red velvet is essentially a light chocolate cake with red coloring. Anything that goes with chocolate would go with red velvet. My personal favorite is cream cheese buttercream.

or coconut-pecan like in german chocolate cake ..i know there is a recipe from scratch here, sorry i dont have the link.

Thanks for the response. I guess I will bake two & try both cream cheese & butter pecan. I think I gained 5 lbs just thinking about it. icon_cry.gif

or how about a combo of both? fill w/ alternating layers of the pecan filling and cc frosting, and frost with the cc. you wont be able to really decorate anything elaborate with the cc recipe i posted, but it will taste SO good!
