Well, red velvet is essentially a light chocolate cake with red coloring. Anything that goes with chocolate would go with red velvet. My personal favorite is cream cheese buttercream.

Red velvet is sooo popular! Is it fond memories of olden days or the color that attracts people to this cake...

Thanks for the response. I guess I will bake two & try both cream cheese & butter pecan. I think I gained 5 lbs just thinking about it.

or how about a combo of both? fill w/ alternating layers of the pecan filling and cc frosting, and frost with the cc. you wont be able to really decorate anything elaborate with the cc recipe i posted, but it will taste SO good!
