How big are your cake balls, and truffles?
What do you charge?
Also have you put them in the freezer AFTER they have been dipped in chocolate? What were the results?

i go by what i want - would i be happy with a truffle that size if it was offered to me? generally i go for about a teaspoon of truffle.
freezing chocolate can be a bit iffy, sometimes it makes it look funny even though it will taste ok.
no real charging advice, cause i dont sell stuff, but cover your ingrediants costs, and remeber to put a value on the time too.

I used a mini icecream scoup as recommended - but it still was too big. They are so rich that it is better to make them smaller. I charged $2 but if you go smaller $1.50 would be good.
I had so much fun making these...if melt a little bit of white or colored chocolate you can pipe swirls, hearts, etc on top for extra fancy ct.
