im def going to try this recipe. ive been looking for an oil based coconut cake?
it will have to wait though - i have to wait though - my baking club is actually making a coconut cake this month - so i have to try that recipe first :

sheeza, I made this cake for the first time the other day. What you are describing, is also how mine was. Don't worry though, after you fold in the egg whites, it will lighten it up.

JGMB: PFTUAHAHAHA!!! (meant to be pronounced with a bit of spit, as I had a mouthfull of water when I read this). Yes, I actually do not do dinner time, I let everybody scramble for whatever they can dig up, and then it's only dessert time that I make official. Funny icon_wink.gif.

sheeza - It will be very dry before the eggs, but it should not be dough-like. Did you accidentally add to much flour?

Not sure how many cups, but it makes enough for 3 a 1'' 8'' layers
