I second Alan's comment. That's what I use and always have good results. I buy it in a 50lb bag because our stores here do not sell it but I have to buy it from a commercial food supply place.

Being in California I have used Swansdown most of my life but have used Softasilk recently and have not noticed any difference. Here lately, I have changed to the BULK cake flour at our local Winco and there is NO difference except for the price ![]()
