Is there any specific brand of cake flour that you professionals use or recommend. I've just been using Pilsbury's SOFTASILK from the grocery store. Just wondering if there was a better product out there.

You're using a very good brand. I personally have not seen a big difference in the cake flour I used from bakery suppliers and Softasilk.

I second Alan's comment. That's what I use and always have good results. I buy it in a 50lb bag because our stores here do not sell it but I have to buy it from a commercial food supply place.

Being in California I have used Swansdown most of my life but have used Softasilk recently and have not noticed any difference. Here lately, I have changed to the BULK cake flour at our local Winco and there is NO difference except for the price thumbs_up.gif

I too went to bulk and didn't notice a difference. I can get 50 lbs for $21, and 2 lbs of Softasilk for $3.59 BIG price difference!!
