When making mousse cakes, is it best to use marzipan, ganache or what do I use? I've never used marzipan before, but wouldnt mind trying it. DOes anyone have any recipes for mousse cakes? Any kind is fine, Im think about chocolate & peanut butter...thanks

I used Ghiradelli bittersweet chocolate chips for the ganache, as I find it gives me the best chocolate flavor at a budget price. The raspberry jam was an excellent complement to the chocolate cake and mousse, I used jam with seeds which worked fine. The mousse was not very sweet, but it went very well with the chocolate cake for a sophisticated, rich, chocolatey, not too sweet dessert. Truth is I substituted in a cake and ganache recipe from this site that I like:
