I made 4 layers of hummingbird cake for a wedding this weekend, I planned to freeze all and then pull out a few days before friday to decorate. My question is can I just refridgerate the hummingbird cake until then or will the banana go bad before then? Do I need to freeze it to make sure it will not go bad?

I make this all the time. It's my daughters favorite. Once the bananas are cooked they will not discolor. It should be fine.

I've made it a couple of times and freezed it....I can't tell a difference in taste at all! Like MnSnow, I think it's because they are already cooked. I also have done Banana Nut bread and freezed it as well and it still tasted like banana nut bread!!!

HTH and good luck!
