Help With Coral

I have an order for a wedding cake next month and I found this picture off of this site (I think) and she wants it similar to this. She said she really likes the coral look. I will be doing a 14in. square with a 10 in. round. There will be crushed vanilla wafers for sound around the tiers and candy mold seashells and she wants some tropical flowers too. Anyway, I need to know how to do the coral. Should I just draw it on with buttercream or should I make them out of candy melts? HELP!

Excuse me, that will be crushed wafers for SAND around the layers. Also, I thought it would look funny to have such a big cake as the top tier, but Im thinking if I put a big shell on top with the sand and smaller shells it won't look too bad.

Hi

One way is to take melted chocolate (tempered-wilton?) melt and place over a bowl of ice then carefully remove quickly. Hope you can understand info. Could use white chocolate or tint it a coral color.

I had coral on my daughters cakes and I used royal icing.. I piped it onto parchment paper and built it up layer by layer and then let it dry for several days before putting it on the cakes.. It turned out great.. Good luck with your cake. Hope you post a pic of it when you are done.

Definatley royal icing. That is what I used on mine. It is very fragile so make plenty of extras, but it has the perfect effect. Can't wait to see your pictures!

And royal icing is about the only thing that we can't put Crisco in! Right Sunlover00?

Seriously, I finally remembered a cake I was thinking of that had coral on it. He made the coral from grape stems (grapes removed of course) and dipped them in white chocolate. Seems sturdier than royal. Hope this helps.

i made a sponge bob cake with coral around the sides using very stiff bc and a #3 tip. i piped it in tubes up the cake in bunches and let it set. then i used a dry spaghetti and poked holes in the tops of the tubes. this may not be fancy enough for your cake though. i hope it helps a little. icon_smile.gif

sls0812, I tried the grape stem coral...it was not as easy as I thought ....the chocolate either was too warm and dripped off leaving the dark stem showing through, or too cool, making it too lumpy looking. We did use the lumpy ones in the netting for my cake but it is very hard to see them in the picture. But there are so many kinds of coral, you can get away with pretty much any look. icon_lol.gif
