I have a Bride that said she sampled a Buttercream frosting that was smooth, buttery and less sweet that she really liked.

My experience the frostings that are less sweet are hard to smooth out.

Does anyone have a suggestion?

I found this on cc. I haven't tried it, but it seems like it would work. Good luck. If this link doesn't work, it is the Buttercream - Less sweet recipie in the recipie section. It states that it crusts lightly.

Sounds like she wants smbc or imbc. I've only used it on cupcakes, so I can't help you with the smoothing part. It does taste really good, not too sweet. It has a wonderful texture.

I just use the Wilton class recipe, with half butter and half shortening..... add a little salt and almond extract in place of the vanilla.... that seems to cut the sweetness..
