I have searched the forums for the answer to this but haven't been able to find anything. How far ahead can I cover a cake with fondant and it still be ok? Can I cover it on Tuesday to be served on decorated on Thursday and served on Friday? I'm using chocolate MMF on a milk chocolate cake with a chocolate chip cookie filling.
I usually have a MMF covered cake sit for a day or two easily with no problem! But, had an unusual situation one time where I actually had to let a MMF covered cake sit (refrigerated) for 9 days one time 
(for family, not a paying customer) and was thinking it wouldn't be any good to eat, 
but was very surprised to find it wonderful.... 
I wouldn't make that a habit, but it was a good experiment for sure....
