Also shopping for an oven! Have one in the bakery that is a small convection oven. Not so good for big quantities! I could also use some advice. 
I hear Southbend is really a great oven, but I am currently leaning towards Deluxe. (it is more expensive though) It has a slower fan in it which is better for baking cakes. I hear blodget runs hot and they were REALLY out of my price range.
What I really would like to hear about as well is mixers besides Hobart. Cant afford it either! (even on ebay)
