Are you using real chocolate or coating chocolate/candy melts? With either you need to ensure that your molds are exceptionally clean so the chocolate can retract from the mold and it should slip right out with little effort when set. If the molds aren't totally clean the chocolate/candy will adhere to whatever is in there and as it sets it can crack, rather than retract away from the walls of the mold. There could be other issues, but we'd need more info.
yes, candy melts aren't really chocolate - they are chocolate flavored.
