I tried the Super Enhanced Cake Formula recipe that I found here on CC. I did a chocolate cake on Thursday and a lemon cake tonight. This is now my go-to recipe for cakes. The taste, texture and consistency of the cakes was amazing. Hardly any crumbs, firm yet moist and light, and it held up perfectly for decorating.
I followed the recipe exactly for the chocolate cake. I tweaked the recipe slightly for the lemon cake, adding 3 tablespoons of lemon pudding mix and substituting lemon extract for the vanilla (I wanted it to be really lemony). It turned out perfectly. I also like that it yields more batter than most recipes. I did two 8 inch rounds and had enough left over for one 6 inch round, which my DH and I nibbled on. That way, you know just what the cake tastes like -- no more surprises about what the family and friends are going to taste.
Just wanted to share and thank my fellow CC-ers for rating this recipe so highly, which is what prompted me to try it.
I've been looking for a lemon 'tweaker', so adding the lemon pudding/extract sounds delish.
Now I'm determined to try the extender recipe. I just need more people to bake for!
Hi Missy....I noticed from another post that you love to bake cupcakes..me too! I use the extender recipe for cupcakes because I take large numbers of cupcakes to the school that I work in every other month. I bake them with the extender recipe and freeze them, its wonderful! I think I will try them with this recipe next.
