I've frozen ganache for up to 6 weeks with no problems whatsoever. Just make sure to take it out well before you need it because it takes a very long time (mine took 5 hours) to thaw to room temperature. I haven't had much luck thawing in the microwave, it seems to go from cold to melted too quickly.
