I recently read about a "smear' that is premade instead of using flower and crisco to prepare the pan. has anyone heard of this and does anyone have the "recipe". Also, I love to make and decorate cakes, however, I HATE to make buttercream. I have not had a good consistency in quite some time. I started decorating last May was really doing ok.... until I had a wreck in Sept and hurt my shoulder and back. I had to stop decorating for a bit and now want to get started again. The last couple of times I made buttercream, it was too dry. Also, I never seem to be able to make enough. My normal batch is double the Wilton's class recipe and I usually run out!!! Any shortcuts are great advice for this "dreaded" task!?? Thanks.... I am ready to try to decorate again!!!! ~Tonja

The "smear" is called Cake Release by Wilton. You can find it at WalMart, Hobby Lobby, etc. The recipe for it is in the Wilton 1 Student book. It may also be on their website.

RE Dry Buttercream: If it's too dry....add more liquid. Small amt at a time. I always make 50% more icing than I think I'll need. Then I usually have just enough! IF I'm lucky and have some left over it's okay, because I'll usually use it before it gets dry and sticky.
