Serving Sizes For Odd Sized Pans???

My Wilton chart does not list serving sizes for 11, 13, 15, 18, 19, and 20" pans. Does anyone know the industry standards for these sized pans. I've got to do a quote for cake for 300 and would like to consider some of these options. Thanks!!!
