Chocolate Icing That Will Hold Up Outside?!

I am going tailgating for a football game this weekend, and my Father In Law has begged me to make him some cupcakes. The problem is the only cupcakes he likes are the yellow cake with chocolate icing. It is Florida, and it's hot and humid. I have looked and tried to find one, but have come up empty handed. Anyone have any suggestions?

I made the choc icingon the Hershey can .... don't refrigerate them ... let them set out and air dry and they crust very well. My recipe, with cocoa or melted chocolate & cocoa, added will hold up well.
