Mousse Filling Question

When I make a "mousse" filling I use instant pudding and heavy cream. Was wondering if instead of instant pudding, I could use a box of flavored gelatin. Has anyone tried that?

Gelatin works, but think about how Jello tastes-- like "cherry" and not like cherries, you know?
