I'm hoping to get some ideas on a recipe for filling cupcakes. I'm making a cupcake cake for next weekend and my aunt has suggested filling them with some sort of filling. I'm looking for a recipe that won't need to be refrigerated (nothing chocolate or fruity). Something more along the lines of vanilla.

I found a cupcake filling recipe on this site (made with evaporated milk, crisco, sugar, milk and vanilla) Anyone recommend this?

Melvira just started this Bettercreme cupcake filling thread:

FYI, Bettercreme can also just be used, as is, and doesn't require refrigeration.

Bettercreme (Ready-to-Use) Handling Instructions:
(Same for liquid after whipping.)

The twinkie filling on this site is DELICIOUS! Although, I use powd. sugar instead of granulated and leave out the salt. It gives a nice fluffy filling and you can flavor it how you like....vanilla, almond, orange, etc.
