I had two events this weekend and both cakes were square. I always have trouble when doing square cakes. After starting it seems that my icing gets soft and then doesnt hold up. I use sugarshacks icing....Which I love, but I am wondering if there is a different icing out there that is easier to work with that makes doing a square cake any easier. I have seen alot of peoples cake that they used IMBC and it looked great, is that the way to go...Please help, I have a 4 tier square coming up this week!!!
It's not that I have a probelm getting crisp corners, I just can't get the icing to work right for me. After working with it for a little while, it gets soft and doesnt hold it's shape. Then the cake starts to get too moist, and starts falling apart. And the icing gets crumbs in it.
Do you have Sugarshacks buttercream dvd? She shows you how to get the crisp corners on the square cake.
This helped me SOOOOOO much. Her frosting is awesome too! HTH
