Just got an order for a Pineapple Upside Down Cake to feed 30. Does anyone know a good recipe?
my recipe won't feed thirty but i guess you could always double or triple it and make it in a large pan. i start with a butter yellow cake mix, add pineapple juice in place of water. in my large stainless steel skillet (most people use cast iron, i don't have one) i melt about 1/4 c margarine with one cup brown sugar. add pineapple rings, or chunks depending on which i have. sometimes i add maraschino cherries, sometimes i dont.
then add the cake and bake.
its one of my favorite cakes and i like it because the traditional pinepple upside down cake seems very dry to me, almost like a shortcake or a biscuit. but since this uses a cake mix its very moist.
