I use choc cake mix (duh) and replace 2/3 c flour with 2/3 c cocoa powder. I only use 1 t salt as the cocoa powder tends to make it too slaty for my taste.
For the liquid simply replace the water with brewed coffee (I do 50/50 chocolate milk/coffee).
I also add a pkg of chocolate instant pudding and use Nielsen Massey's chocolate extract for an extra punch. Add mini-chocolate chips for the choco-holic!
If you want the coffee flavor to be noticeable, then use all coffee for the liquid and Nielsen Massey's coffee extract (it's the strongest I've found).
