I have found that most people use regular flowers from the flower store. If they are going to come into contact with the cake, you can give them a dip in ice water and let them drip dry before you use them. Or lay wax paper or parchment between them and the cake. From the advice I received, it is ok to use them in the Wilton spikes.

I've used lots of fresh flowers on cakes. I am very careful to make sure nothing comes in direct contact with the cake. Being that we have no idea where they came from or what they have been exposed to. Some growers are actually using mercury to preserve the flowers these days. The best way to decorate with fresh flowers is, as mentioned, separating them from the cake with parchment or plastic wrap. You can then use a base layer of greenery to hide your wrap. Then build up the flowers from there. You can also use the flowers spikes...just be careful how many you use because they could interfere with the structure of the cake. Most flowers will do fine for a number of hours without a water source so you can usually get away with just layering them on the cake. Hope this helps!
