Cake Goes Sticky When I Pull It Out Of The Fridge

pre-made, you mean from a can or fondant? what happens when it gets "sticky?"
Regardless of what kind of icing you're using, stickiness is likely caused by going from "cold" to "warm" and condensation collecting. This often happens when you use fondant but a lot of people just let their cake come to room temp. and the condensation just dries. Make sure you don't touch it while it's damp, especially if you're using fondant. It can leave a mark.
