I'm doing 100 cuppies for PTO to give to the teachers at school for teacher appreciation committee. She wants more than one flavor, maybe like 4 or so. What should I do???? Should I do a filling or no filling? If you get to choose the flavors how do you decide which to do? I was reading the thread about fav recipes and someone mentioned a smores one that sounds yummy. Please give me any and all suggestions!!! ![]()
If I were going to make 4 flavours, I would choose: a vanilla, a chocolate, a fruit filled and some thing unexpected. My suggestions are
Vanilla: Cookies & Cream w/ cookies & cream buttercream
Chocolate: Cherry Chocolate w/ chocolate buttercream
Fruit Filled: Strawberry w/ lemon filling & strawberry buttercream
Unexpected: Creme Brulee

My most popular cupcake is a strawberry shortcake inspired cuppy. I use a vanilla cake, fill it with strawberry filling, and then ice with Rich's Bettercreme which is similar to a whipped topping.

Strawberry Cupcakes
2/3 cup whole fresh or frozen strawberries, thawed
1 1/2 cups all-purpose flour, sifted
1 tsp baking powder
1/4 tsp salt
1/4 cup milk, room temperature
1 tsp pure vanilla extract
1/2 cup (1 stick) butter, room temperature
1 cup sugar
1 large egg, room temperature
2 large egg whites, room temperature
note: you could also add additional chopped strawberries folded into the batter
1) Preheat oven to 350 degrees. Line muffin pan with liners (12)
2) Puree strawberries in food processor or blender. You should have 1/3 cup
3) In medium bowl mix together flour, baking powder, and salt.
4) In a small bowl mix together milk, vanilla and strawberry puree.
5) In a large bowl using electric mixer (or electric hand beater) cream butter on medium-high until light and fluffy. Gradually add sugar and continue to beat until well combined and fluffy. Reduce mixer speed and and slowly add egg and egg whites until just blended.
6) On low speed, slowly add half of the flour mixture; mix until just blended. Add the strawberry mixture; mix until just blended. Slowly add remaining flour mixture, scraping down sides of bowl with a spatula.
7) scoop mixture into muffin cups. Bake until tops are just dry to the touch .... 22 to 25 minutes. Let cool before icing
Strawberry buttercream
1/2 cup whole strawberries
1 cup (2 sticks) butter, firm and slightly cold
pinch of salt
3 1/2 cups confectioner's sugar, sifted
1/2 tsp vanilla extract
1) Puree strawberries.
2) In electric mixture beat together butter and salt on med. speed until light and fluffy.
3) Reduce mixer speed and slowly add confectioner's sugar; beat until well combined
4) Add vanilla and 3 Tbsp strawberry puree. Mix until just blended. Do not
over mix or frosting will incorporate too much air. Frosting consistency should be dense and creamy, like ice cream.

In case you are unable to purchase the filling in a sleeve or want to make your own, here's another recipe I came across tonight (I think that it would be really good in a vanilla or strawberry cupcake)
Strawberry Cream Filling (from Wilton)
* 1 package (16 oz.) frozen sliced strawberries in syrup, thawed
* 1 cup heavy cream
* 2 tablespoons corn starch
Yield: Makes about 2 1/2 cups filling.
Directions
1. Combine strawberries, cream and corn starch in medium saucepan.
2. Cook over medium heat, whisking constantly until thickened, about 8-10 minutes.
3. Remove from heat and chill before filling cupcakes or using as an icing on cupcakes.
4. Fill cupcake.

Strawberry Filling
Ingredients
* 1 package (16 oz ) frozen sliced strawberries packed in sugar, thawed
* 1/3 cup granulated sugar
* 3 tablespoons cornstarch
* 1 teaspoon lemon juice
Yield: 2 cups filling.
Directions
1. Drain strawberries; reserving liquid. Add enough water to liquid to equal 1¼ cups.
2. In large saucepan, combine strawberry liquid, sugar, cornstarch and lemon juice; mix well.
3. Heat and stir until mixture boils and thickens.
4. Cool completely.
5. Refrigerate until ready to use.
6. Fill cupcakes. Refrigerate until ready to serve.
