What is the best way to keep you writing straight on a cake and it not slanting up hill or down? Thank you for any tips.

Take a long knife blade. Place the tip at the beginning of where you want the "writing". Keep the tip of the knife blade in place. Gently rock the rest of the blade, underlining where you want the "sentence", like a child's writing tablet. It will make a barely visible line, upon which you can write your message.
