Americolor makes mint green food color.

I just added a tiny bit of kelly green from the wilton colors and it made the minty green that is on my swirl drop flower cakes border

If the jungle babies cake in my gallery is the shade you are looking for, I used Americolor leaf green to achieve that color.

Make yellow first, then add a touch of Wilton leaf green - the result is a beautiful mint color.
