Does anyone have a really REALLY good petit four icing recipe? Everyone I've ever tried has turned out grainy, don't know if it was the recipe or if I messed it up. Also, would a chocolate ganache work to cover chocolate petit fours? I have a tasting this Friday for a "real picky mom" as described by the bride, and I'm nervous!! ![]()
I have heard/read about melting fondant, which makes sense. I have yet to try it...but if you can't find that, then go to wiltons web site - they have a recipe for poured fondant that is great for petit fours.

If you scroll about 3/4 of the way down you start to see hyperlinks. The one for Petit Fours is in the first column on the far right of the screen. I found this site very useful!! There are several different recipes on there for the icing. HTH!
